Salad Ingredients
  • 2 pieces chicken breasts
  • 4 cups mixed salad greens
  • 1 piece avocado, diced
  • 1 cup cherry tomatoes, halved
  • 2 pieces hard-boiled eggs, chopped
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup blue cheese, crumbled can be substituted or omitted for dairy-free
Honey Dijon Dressing
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 1/4 cup olive oil
  • to taste Salt and pepper

Method
 

Grilling Chicken
  1. Grill the chicken breasts until cooked through, then slice them.
Prepare the Salad
  1. In a large bowl, combine mixed salad greens, cherry tomatoes, avocado, hard-boiled eggs, bacon, and blue cheese.
Make Dressing
  1. In a small bowl, whisk together honey, Dijon mustard, olive oil, salt, and pepper.
Serve Salad
  1. Top the salad with the sliced grilled chicken and drizzle with the honey Dijon dressing.
  2. Toss gently and serve immediately.
