For the Potatoes
  • 1 pound baby potatoes Halved or quartered for even cooking.
  • 2 tablespoons olive oil For tossing with potatoes.

  • 1 teaspoon dried herbs Optional, for extra flavor.
For the Vegetables
  • 2 cups fresh spinach Add more for a larger serving.
  • 1 cup mushrooms, sliced Any variety you prefer.
  • 1 tablespoon olive oil For sautéing the vegetables.

Method
 

Preparation
  1. Preheat the grill or a grill pan over medium heat.
  2. Season chicken breasts with olive oil, dried herbs, salt, and pepper.
  3. Grill chicken for 6-7 minutes on each side or until fully cooked.
  4. While the chicken is grilling, preheat the oven to 400°F (200°C).
Cooking Potatoes
  1. Toss baby potatoes with olive oil, salt, pepper, and herbs.
  2. Spread on a baking sheet and roast for 25-30 minutes, or until crispy and golden.
Cooking Vegetables
  1. In a skillet, heat a little olive oil over medium heat.
  2. Add the sliced mushrooms and cook until browned.
  3. Add the spinach and sauté until wilted.
Serving
  1. Serve the grilled chicken alongside the herb-roasted baby potatoes and sautéed spinach and mushrooms.
  2. Garnish with fresh herbs if desired.

Notes
