Instructions
Activate the Yeast:
In a mixing bowl, combine warm water, yeast, and honey. Stir gently and let it sit for 5-7 minutes, or until foamy.
Mix the Dough:
Add molasses, softened butter, cocoa powder, coffee granules (if using), and salt to the yeast mixture. Mix well.
Gradually add whole wheat flour, bread flour, and all-purpose flour, mixing until the dough comes together.
Knead the Dough:
Transfer the dough to a floured surface and knead for 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5-7 minutes.
Let it Rise:
Place the dough in a greased bowl, cover with a clean towel or plastic wrap, and let it rise in a warm place for 1-2 hours or until doubled in size.
Shape the Loaves:
Punch down the dough and divide it into 4-6 equal pieces. Shape each piece into an oval loaf or roll. Place them on a baking sheet lined with parchment paper.
Second Rise:
Cover the shaped loaves with a towel and let them rise for another 30-45 minutes.
Preheat Oven:
Preheat your oven to 375°F (190°C).
Garnish and Bake:
Brush the tops of the loaves with water and sprinkle with rolled oats. Bake for 20-25 minutes, or until the bread sounds hollow when tapped.
Cool and Serve:
Let the bread cool slightly before serving. Enjoy it warm with butter!
Tips:
To get the signature sweetness, use fresh honey and molasses.
You can freeze the bread for up to 3 months—just reheat in the oven when ready to serve.
