Ingredients

For the Dough:

  • 1 ½ cups warm water (110°F/43°C)
  • 2 ¼ tsp active dry yeast (1 packet)
  • 1/4 cup honey
  • 1/4 cup molasses
  • 2 tbsp unsalted butter, softened
  • 1 cup bread flour
  • 1 ¾ cups whole wheat flour
  • 1 cup all-purpose flour (plus extra for dusting)
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp instant coffee granules (optional, for richer flavor)
  • 1 tsp salt

For Topping:

  • 2 tbsp rolled oats (optional, for garnish)

Instructions

  1. Activate the Yeast:
    • In a mixing bowl, combine warm water, yeast, and honey. Stir gently and let it sit for 5-7 minutes, or until foamy.
  2. Mix the Dough:
    • Add molasses, softened butter, cocoa powder, coffee granules (if using), and salt to the yeast mixture. Mix well.
    • Gradually add whole wheat flour, bread flour, and all-purpose flour, mixing until the dough comes together.
  3. Knead the Dough:
    • Transfer the dough to a floured surface and knead for 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5-7 minutes.
  4. Let it Rise:
    • Place the dough in a greased bowl, cover with a clean towel or plastic wrap, and let it rise in a warm place for 1-2 hours or until doubled in size.
  5. Shape the Loaves:
    • Punch down the dough and divide it into 4-6 equal pieces. Shape each piece into an oval loaf or roll. Place them on a baking sheet lined with parchment paper.
  6. Second Rise:
    • Cover the shaped loaves with a towel and let them rise for another 30-45 minutes.
  7. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  8. Garnish and Bake:
    • Brush the tops of the loaves with water and sprinkle with rolled oats. Bake for 20-25 minutes, or until the bread sounds hollow when tapped.
  9. Cool and Serve:
    • Let the bread cool slightly before serving. Enjoy it warm with butter!

Tips:

  • To get the signature sweetness, use fresh honey and molasses.
  • You can freeze the bread for up to 3 months—just reheat in the oven when ready to serve.
